|Abstract: ||This research considers the management policy for applying biotechnology to food processing in Thanh Hoa province. Thanh Hoa has a large natural area and dense population with the main industries being agricultural production, and thus has great potentialities of the province to make high quality food products.
Literature review showed that the current situation of applying biotechnology in food processing in Vietnam is far behind that in developed countries, although policy makers in Vietnam are well aware of the important role of biotechnology. By surveying the entire food industry in Thanh Hoa, the research used the SWOT analysis to analyze the current situation of applying biotechnology in food processing. It showed that Thanh Hoa has made some achievements in applying biotechnology for its food processing industry (e.g., beer, wine, alcohol, fish-sauce, and “nem chua”). However the use of biotechnology in food processing industry remains at a small scale. Specifically, the main biotechnology is the traditional fermentation, advanced technologies in microorganisms and enzymes have not been applied, products do not have high-nutritional/economical values, food safety and hygiene standards are mostly neglected, and there is a lack of human resources well trained in food biotechnology.
To meet the determined targets of Thanh Hoa in developing its food processing industry, we have proposed in an integrated manner various feasible solutions in terms of management policy in order to accelerate the development and application of food biotechnology in Thanh Hoa, by improving the following nine main areas: promoting awareness, mobilizing and utilizing financial resources, science and technology, material and raw material resources management, human resources training, product marketing, quality control, minimizing negative effects on ecology environment, and finally, interaction and cooperation among universities and research insitutes. Though various aspects of SWOT analysis have been analyzed, the solutions were proposed based mainly on exploitating opportunities of Thanh Hoa and its food processing industry while solving difficulties.
The results of research will be implemented to make more products of high-nutritional and high-economical values and through appropriate production with food safety and hygiene standards, such as food alcohol, modified starch, supplement-sugar, microorganisms, amino acids, organic acids, and aquatic products.
